Savor the warm flavors of fall this holiday season with this comforting recipe that blends sweet honey and cranberry with savory herbs and crisp bacon into a dish that satisfies on its own or acts as the perfect accompaniment to your favorite holiday dishes.


1 Cup French Lentils                                                                       
1 Cup Crimson Lentils
4 Cups Water
2 Bay Leaves
1/2 Cup Bacon Diced
1/4 Cup Shallot Small Diced
1/4 Cup Garlic Minced
2 Tbsp. Fresh Thyme
1/4 Cup Honey
2 Tbsp. Chervil
1/8 cup Dried Cranberries


Combine water, French lentils, bay leaves and salt in a large pot and bring to a boil. Reduce to a simmer and after 10 minutes, add red lentils. Cook lentils until tender, strain water and remove the bay leaf. Sauté bacon in a pan until crisp, then remove bacon and set aside. Discard half of the bacon grease from the pan.  In the same pan, add shallots, garlic, dried cranberries and thyme and cook just until tender.  Add lentils continue to stir until mixture is hot throughout.  Add honey, bacon, chervil (add seasoning if desired) and plate dish for serving.
